It’s been a while since I got mine set up and working, but IIRC all I had to do was install Android Auto from the preinstalled GrapheneOS App Store app
I use FitoTrack, seems to track walking/running the best. Haven’t tried it with other workout types though

I had a problem loading it during the playtest (black screen, forever loading icon) and had to install Proton EasyAntiCheat Runtime for it to start up properly. Never had a problem launching the playtest or full game after that!
not sure what method you tried, but I was able to get V2 running via Lutris using the guide in this repo
I was able to get the V2 suite working via Lutris, haven’t tried this new version though. Seems to be possible as documented here
